4 eggs
2/3 c. oil
1 c. sugar
2 c. pumpkin
1 1/3 c. prune juice
3 c. white flour
1 c. wheat flour
1 t. salt
½ t. cream of tarter
2 t. baking soda
1 t. cinnamon
1 t. ginger
1 t. cloves
1 t. nutmeg
12 oz. {about 2 c.} prunes, cut into quarters
½ c. chopped nuts
Mix eggs, oil, sugar, pumpkin and prune juice; set aside. Mix all remaining ingredients except nuts and prunes; add to pumpkin mixture and stir until blended. Stir in chopped nuts and cut-up prunes. Pour into 3 greased 8x4” loaf pans. Bake at 350 degrees for 1 hour. Let cool 10 minutes, then remove from pans. |
