“This is a new favorite in our house! I especially love the colors of this dish. It's perfect anytime of year.”

  • 1 lb. kielbasa, cut into ½-inch slices
  • ½ medium onion diced
  • 1/3 bag baby carrots, sliced
  • 2 celery ribs, diced
  • 2 garlic cloves, minced
  • 1 can petite diced tomatoes, drained
  • 1 can cannellini beans, rinsed and drained
  • Salt and pepper, to taste
  • Cooked rice

In a skillet, cook kielbasa, carrots, onions and celery in a little oil until well heated and the veggies are tender. Add garlic, salt and pepper. Let cook for 1 minute. Add beans and tomatoes. Bring to a boil and let cook for 5 minutes. Serve over warm, cooked rice.

  • Tortillas
    Pizza sauce
    Fried sausage (or pizza toppings of your choice)
    Shredded cheese

    Lay the tortillas on baking sheets and spread with pizza sauce. Sprinkle with sausage and cheese. Place the rest of the tortillas on top. Bake at 350 degrees until cheese is melted. Cut into 1/4s and 1/2s and serve!
